Dear Colorado Wine Club Member, Doug Phillips, founder and co-owner of Plum Creek Cellars, died this month. He was diagnosed with cancer about three months ago. Plum Creek was one of the first and most successful wineries in the state. They were committed to making wine out of 100% Colorado Grown grapes. They were well-known throughout the state. Jenne Baldwin, a friend and respected colleague remains as winemaker at Plum Creek. This sad news took us all by surprise. Our sincerest condolences go out to Doug’s wife Sue. Please raise a glass in respect to one of our industry leaders. Enclosed are your Wine Club bottles. This month’s wines for the Sweet Colorado Wine Club are: Apple Blossom, Winery at the Holy Cross Abbey It’s been quite some time since we featured this wine. If memory serves, it’s very similar to the last version. It’s medium sweet, with an apply nose and a pretty, green/yellow color. In the mouth you’ll find a Granny Smith flavor and a crisp acid balance. It’s wonderful chilled on the patio with crispy brown potatoe chips with a rich creamy dip of your choice, but a fresh yogurt dip comes to mind. Port III, Graystone This latest release is a smooth, velvety style of port that is mellowed by aging 3 years in oak and bottled young to capture the strong, fiery personality of a young ruby port. A wonderful wine served with chocolate or traditional Stilton Blue Cheese and walnuts after dinner. As always, enjoy the wines in good health! Truly,
